Domaine Daniel-Etienne Defaix Chablis Vaillons 1er cru 2010
A recently-released library offering that shows great wine stands the
test of time, this is smokin' good stuff. And in this case, the wine is
elevated to near mythic status with Daniel-Etienne Defaix keeping it
simple. Let's start with the 45 year old vines. Strict triage at
harvest, native yeasts and two winters (18 months) in the cold cellars
on the fine lees in stainless steel tanks. Texturally riveting with a
depth and complexity that will make your head spin, the 2010 Vaillons is
a late release from Defaix that is just dripping with deliciousness.
Deep and penetrating scents and flavors of cling peach, sous bois,
orange zest, fossils and oyster liquor with floral touches and lively
acidity and freshness. So long finishing it becomes hard to know when
one sip ends and the next begins. Enjoy this stunning wine now through
2029. Wow!
