Two years ago, we visited Taconic Distillery to barrel taste the new release of our best selling bourbon, Taconic Maple Finish, before it was bottled. During our last visit, we discovered 2 barrels hidden and separated from the rest. Long story short, those were Japanese Mizunara barrels, and they were aging their best bourbon in these fantastic casks. Here is what you need to know about Japanese Mizunara oak: 

• First, the Mizunara tree needs to be at least 200 years old before it can be made into a proper cask. 
• Second, it's one of the rarest and most expensive types of oak in the world. 
• Third, it's extremely difficult to source even in Japan because it adds unique flavors to the whiskey, like sandalwood and coconut, while also increasing smoothness. 

Now, the new release clocks at 107 proof. If that is too hot for your palate, all you have to do is add ½ ounce of water for every 2 ounces of Taconic Whisky and it will be the same as last year’s proof. 

Taconic Bourbon Mizunara Cask Finish

Taconic ages their best bourbon in new American oak and then finishes it in a Mizunara cask - a unique process which takes an additional 6 months of aging. The spectacular result is a subtle and smooth bourbon, with aromas of toasted wood and nutmeg.
