Taconic Distillery ages their Private Reserve bourbon in used maple syrup barrels from Catskill Mountain Sugar House, a process which takes an additional 6 months of aging. The result is a textured and smooth bourbon, with aromas of toasted wood and nutmeg. On the palate lie flavors of vanilla, caramel and baking spices with a touch more texture than any other bourbon out there, in my opinion. The finish is warm and spicy.
